Most Americans consume gluten in every meal, every day. In case you don't already know, the term 'gluten' is used for the group of proteins found in grains. Many people react to the forms in wheat, rye, barley and oats. (Oats are often contaminated from wheat in the field, or during transportation and processing though some people with Celiac disease react to gluten-free oats as well.)
